Stuffed Lobster with Fettuccine


Piggy Back Lobster Tail

  1. First thought that comes to mind: When is the next time I can make this? I need a special occasion!

5 lobster tail


White Sauce

¼ cup of butter

1 garlic clove

½ cup of white wine

½ cup of heavy cream

1 cup of Parmesan cheese

Salt, pepper and tarragon to taste


Seafood Stuffing

1/3 cup of shrimp

1/3 cup of baby scallop

½ cup of canned cooked crab

1 lemon


Fettuccine noodles





  1. Blanch lobster tail ((one at a time) in boiling water for 10 seconds, just till shell turns bright red
  2. Place lobster tail in ice water to cool
  3. Using scissors, cut top of shell down center, leave the tail. 
  4. Pull tail meat up and place on top of split shell
  5. Set aside


White Sauce

  1. Melt 1/4 C of butter in pan.
  2. Add 1 glove of crushed garlic
  3. Add 1/2 C of white wine
  4. Add 1/2 C of heavy cream
  5. Add 1 C of freshly grated parmesan cheese
  6. Add pinch of salt and tarragon
  7. Let cool


Seafood Stuffing,

  1. Quickly sauté 1/3 cup of chopped shrimp and 1/3 cup of scallop
  2. Mix together ½ cup of cooked crab meat, shrimp, scallop and 5 Ritz Crackers, crumbled, 1/2 of white sauce and a squeeze of lemon juice



  1. Spoon half the stuffing into shells
  2. Place lobster tail meat back on top
  3. Brush with butter
  4. Bake in preheated (350F) oven for about 10-12 min
  5. Cook pasta, and mix with white sauce
